JR I can't remember the specific moment, but it was probably somewhere around the time that I was tall enough and competent enough to be in the kitchen! I used to bake tarts and other French desserts at my grandfather's knee when I was really little, and have been obsessed with baking cakes ever since.
LPM Why do you think baking is considered sexy?
JR Maybe because there's just something alluring about sugar. Cakes and desserts can be really seductive.
LPM What inspires you?
JR I'm always inspired by what's in season. In winter, big beautiful juicy lemons inspire me to do all sorts of things with citrus. In summer I fall in love with fresh berries and try to incorporate them into my baking in every way possible. Blogs, cook books and fellow bakers inspire me, as well as travelling, particulary to New York.
JR I was pretty thrilled when I found out that the pastry chef at The French cafe had tried one of my cakes and rated it very highly!
LPM Your cakes look really scrummy. How did you develop your own style in cake making?
JR My style has certainly changed from when I first started The Caker. At the beginning I was all about decorating them to look a bit dark and sinister, using skulls and raspberry blood to try and take the 'cute' out of cakes. But now I'm going down a road which is much more concerned with the taste and texture of the cake itself, and I tend to use all natural ingredients and fresh flowers as decoration. I have eliminated all food colouring from my ingredients. I guess my style will keep developing as my tastes change.
JR Because the better quality ingredients you use, the better the cake will taste.
LPM What is your advice to New Zealand women in business?
JR If you have a passion, and it's all that you love doing, I think it's worth persuing, but only if you have the perseverence and drive to succeed. I could have given this whole thing up severla times when it got too hard, but I stuck with it and I'm so glad that I did.
LPM How do you balance work and play?
JR Quite well actually. I usually finish up at the kitchen around 4/5pm (unless it's a really busy day), so I have time to chill out, catch up on emails and cook a yummy dinner. Owning my own business also means that I can take time out to travel when I want, so I do a yearly trip to New York to load up on inspiration and have a blast.
LPM Do you have a favourite cake flavor?
JR I loooove a good moist, dense carrot cake, packed with nuts and spices.

LPM What are your three favourite things about living in New Zealand?
JR I love the food scene here, I think we have some amazing resaurants and cafes which make me proud to be a New Zealander. I love (and sometimes dislike at the same time) that it's so small, because I never would have got to where I am now without the amazing word-of-mouth that has gone on over the last 3 years! And I love our NZ summers and going to the beach, it's when I'm at my happiest.
